A French citizen, Sabine parlayed her passion for the culinary arts into a career. At the age of 17, Sabine landed a coveted after-school job at Délices de La Côte Basque working for renowned French chef Guy Pascal, former co-owner of La Côte Basque and La Cascade at the Olympic Towers; the three-year stint laid an invaluable foundation for her future business endeavors. Equally significant was a weekend hostess position at the Westbury Hotel’s Polo Restaurant on Madison Avenue, where Daniel Boulud was sous chef. For two years she greeted the world’s elite, including Jackie Kennedy Onassis, Prince Albert of Monaco, and Billy Martin, gaining insight into the exclusive realm of high-end culinary presentation and service. Concurrent to these two jobs, Sabine earned her B.A. in International Business and Languages at Pace University later pursuing certification in Meeting and Conference Management at New York University. In 1984, Sabine co-founded La Renaissance Pâtisserie in Scarsdale and Larchmont. This French haute cuisine pâtisserie, bistro, and catering company came to be patronized by some of the Metro area’s most prominent individuals and corporations, and was the prototype for Sabine’s current company. 

In the decades that followed, mounting acclaim for Sabine’s inventive design sense (which she attributes to her industrial-designer mother), remarkable food, and operational expertise led to increasingly notable projects. Among the many highlights, in 1995, Neiman Marcus appointed her the exclusive in-house event specialist for all their yearly In-Circle special events and promotional product launches, a post she held for ten years. In 1999, she planned and produced a black-tie dinner at The Kaplan Penthouse, Lincoln Center for the Consul General of the Czech Republic, providing white-glove French service for more than 300 government dignitaries and their guests. The same year, she also designed, catered, and produced a 40th anniversary party for George Stephanopoulos’s parents at his home. In 2000, Sabine was hired by Ashwini Gupta for an American Express corporate-incentive event that led to Dun & Bradstreet hiring her to transform their Murray Hill, New Jersey, corporate offices into a British Isles–themed, formal dinner for 1000 people. In 2002, she was commissioned by Donald Trump’s committee, led by Carolyn Kepcher, to conceptualize the theme, design, catering, and management of the three-day opening of the Trump National Golf Club in Briarcliff, New York. In 2006, she was tapped to design and implement the décor for Paul Newman’s Hole in the Wall Gang Camp fundraiser, which was hosted by the Metropoulos family and attended by Paul Newman, David Rockefeller, and Chevy Chase. 

In 2007, Lalique entrusted Sabine to create and execute the New York launch of its NeoLalique line, both at its flagship Madison Avenue boutique and at Saks Fifth Avenue. In 2011, Greenwich Riding and Trails Association selected Sabine to execute their first “Stetsons and Stilettos,” a Western-themed fundraiser at the home of Interactive Brokers Vice President Earl Nemser, which was lauded as the best event of 2011 by Greenwich Magazine. Finally, in 2012 and 2013 she designed and orchestrated two first-time polo events at the Greenwich Polo Club, which were personally recognized by Peter Brant. 

From orchestrating a book signing event for Holocaust survivor and Nobel Peace Prize recipient Elie Wiesel to the New York debut launch of Oliver Creed’s “Love in White Perfume”, Sabine has continued to build upon her 25 plus years of industry experience and broad base of high-profile clientele. 

In 2013 Sabine Poisson, Inc. was launched as a consultancy. At its core, the business focuses on strategic planning, management, and orchestration for corporate, private and non-profit clients, effectively facilitating services to include developing key sponsorships and assisting clients with reaching fundraising goals.
